Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup white wine (optional, can substitute with additional chicken broth)
  • 0.5 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon lemon juice
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and sear for about 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium and add the butter to the skillet. Once the butter has melted, add the minced garlic and sauté for 30 seconds until fragrant.

Step 4

Pour in the chicken broth and white wine (if using), scraping the bottom of the skillet with a wooden spoon to deglaze and lift any browned bits.

Step 5

Whisk in the heavy cream, Dijon mustard, and fresh thyme leaves. Let the sauce simmer for 2-3 minutes to thicken slightly.

Step 6

Return the chicken breasts to the skillet, spooning some of the sauce over them. Cover the skillet and cook for an additional 10-12 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

Step 7

Stir in the lemon juice and adjust the seasoning with salt and pepper as needed.

Step 8

Garnish with chopped parsley and serve the chicken hot with your favorite sides, such as mashed potatoes, roasted vegetables, or a fresh green salad.
