Ingredients

  • 450 grams Ground beef
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Tomato paste
  • 0.25 cup Green olives, chopped
  • 1 large Hard-boiled egg, diced
  • 12 pieces Empanada dough rounds
  • 1 large Egg, beaten (for egg wash)

Directions

Step 1

In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and cook, stirring occasionally, until softened, about 3 minutes.

Add the minced garlic to the skillet and cook for another 30 seconds until fragrant.

Add the ground beef to the skillet. Cook, breaking it up with a wooden spoon, until browned and fully cooked, about 6-8 minutes.

Stir in the paprika, ground cumin, salt, and black pepper. Add the tomato paste and mix well until evenly combined.

Remove the skillet from the heat and stir in the chopped green olives and diced hard-boiled egg. Set the filling aside to cool slightly.

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
