Ingredients

  • 700 grams Beef chuck (cut into 1-inch cubes)
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion (finely chopped)
  • 2 medium Carrot (diced)
  • 2 medium Celery stalk (diced)
  • 3 cloves Garlic (minced)
  • 3 tablespoons All-purpose flour
  • 440 milliliters Guinness stout
  • 300 milliliters Beef stock
  • 2 tablespoons Tomato paste
  • 1 teaspoon Fresh thyme (chopped)
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 sheet Frozen puff pastry
  • 1 Egg (beaten, for egg wash)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Season the beef chunks with salt and pepper.

Step 3

Heat 1 tablespoon of olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear the beef in batches, ensuring each piece is browned on all sides. Remove the beef from the pot and set aside.

Step 4

Add the remaining 1 tablespoon of olive oil to the pot. Sauté the onion, carrot, and celery for 5-7 minutes until softened.

Step 5

Stir in the garlic and cook for another minute until fragrant.

Step 6

Sprinkle the flour over the vegetables and mix well to coat. Cook for 1-2 minutes to remove the raw flour taste.

Step 7

Slowly pour in the Guinness stout while stirring, scraping up any brown bits from the bottom of the pot.

Step 8

Add the beef stock, tomato paste, thyme, bay leaf, and the seared beef back into the pot. Stir well to combine.

Step 9

Bring to a gentle simmer, then cover the pot with a lid and transfer it to the oven. Cook for 1.5 hours, stirring halfway through, until the beef is tender and the sauce has thickened.

Step 10

Remove the pot from the oven and allow the filling to cool slightly.

Step 11

Increase oven temperature to 200°C (400°F).

Step 12

Transfer the beef and vegetable filling into a pie dish. Remove the bay leaf.

Step 13

Roll out the puff pastry on a lightly floured surface to fit over the pie dish. Place the pastry over the filling, trimming any excess and crimping the edges to seal.

Step 14

Cut a few small slits in the pastry to allow steam to escape. Brush the top with beaten egg to ensure a golden finish.

Step 15

Bake in the oven for 25-30 minutes, or until the puff pastry is golden brown and crispy.

Step 16

Remove from the oven and allow the pie to rest for 5 minutes before serving.

Step 17

Enjoy your Easy Beef and Guinness Pie with a side of creamy mashed potatoes or steamed vegetables.
