Ingredients

  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 2 cups Green cabbage, shredded
  • 1 cup Carrots, grated
  • 4 stalks Green onions, sliced
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 1 cup Cooked chicken, shredded (optional)
  • 12 pieces Egg roll wrappers
  • 0 Cooking spray

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and grated ginger, cooking for about 30 seconds until fragrant.

Step 3

Stir in the shredded cabbage, grated carrots, and sliced green onions. Cook for 4-5 minutes, stirring frequently, until the vegetables soften slightly.

Step 4

Add the soy sauce and sesame oil to the skillet, stirring to combine. If using cooked shredded chicken, mix it in at this stage. Remove from heat and allow the filling to cool for a few minutes.

Step 5

Lay an egg roll wrapper on a clean surface with one corner pointing toward you (diamond orientation). Place 2-3 tablespoons of the filling near the center of the wrapper.

Step 6

Fold the bottom corner of the wrapper up over the filling, tucking it in snugly. Fold in the left and right corners toward the center, then tightly roll up the wrapper, sealing the top corner with a dab of water.

Step 7

Repeat the wrapping process with the remaining wrappers and filling.

Step 8

Place the egg rolls seam side down on the prepared baking sheet. Lightly spray them with cooking spray to help them crisp up in the oven.

Step 9

Bake the egg rolls for 12-15 minutes, flipping them halfway through, until they are golden brown and crispy.

Step 10

Serve warm with your favorite dipping sauce, such as sweet chili sauce or soy sauce.
