Ingredients

  • 500 grams ground chicken
  • 1 medium zucchini
  • 1 medium carrot
  • 1 small onion
  • 2 pieces garlic cloves
  • 2 large eggs
  • 100 grams breadcrumbs
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons paprika
  • 2 tablespoons olive oil

Directions

Step 1

Grate the zucchini and carrot using the coarse side of a grater. Place the grated zucchini in a clean kitchen towel, squeeze out excess moisture, and set aside.

Step 2

Finely chop the onion and mince the garlic cloves. Roughly chop the fresh parsley.

Step 3

In a large mixing bowl, combine the ground chicken, grated zucchini, grated carrot, chopped onion, minced garlic, parsley, eggs, breadcrumbs, salt, black pepper, and paprika. Mix well until all ingredients are fully incorporated.

Step 4

Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Step 5

Using your hands, form the mixture into small, flat patties, about 2 inches in diameter.

Step 6

Once the oil is hot, place the patties in the skillet (work in batches if necessary to avoid overcrowding the pan). Cook for 4-5 minutes on each side, or until golden brown and fully cooked through.

Step 7

Transfer cooked patties to a plate lined with paper towels to drain excess oil. Heat the remaining olive oil and cook the next batch if needed.

Step 8

Serve warm with your favorite dipping sauce or as a side to a fresh salad or rice dish.
