Ingredients

  • 6 pieces large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon dijon mustard
  • 1 teaspoon horseradish (prepared, not raw)
  • 0.5 teaspoon smoked paprika
  • 1 tablespoon fresh dill (chopped)
  • 2 tablespoons pickles (finely chopped)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon red onion (finely minced)

Directions

Step 1

Place the eggs in a medium saucepan and cover them with water. Bring the water to a boil over medium-high heat.

Step 2

Once the water is boiling, reduce the heat to low and let the eggs simmer for 10 minutes.

Step 3

After cooking, transfer the eggs to a bowl of ice water to cool for about 5 minutes. This makes them easier to peel.

Step 4

Peel the cooled eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a small mixing bowl.

Step 5

Mash the yolks with a fork until they’re finely crumbled.

Step 6

To the bowl with the yolks, add mayonnaise, dijon mustard, horseradish, smoked paprika, fresh dill, chopped pickles, salt, black pepper, and minced red onion. Mix until smooth and well combined.

Step 7

Spoon or pipe the filling back into the egg white halves, mounding it slightly for an attractive presentation.

Step 8

Sprinkle additional smoked paprika and fresh dill on top for garnish, if desired.

Step 9

Refrigerate the stuffed eggs for at least 15 minutes before serving to allow the flavors to develop.

Step 10

Serve chilled as an appetizer or a side dish.
