Ingredients

  • 500 grams All-purpose flour
  • 50 grams Granulated sugar
  • 10 grams Instant yeast
  • 1 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 250 milliliters Warm milk
  • 50 grams Unsalted butter, melted
  • 2 large Eggs
  • 100 grams Raisins or currants
  • 50 grams Chopped mixed peel
  • 50 grams Flour (for cross paste)
  • 4 tablespoons Water (for cross paste)
  • 2 tablespoons Apricot jam (for glaze)

Directions

Step 1

In a large mixing bowl, combine the flour, sugar, yeast, salt, cinnamon, and nutmeg.

Step 2

Make a well in the center of the dry ingredients and pour in the warm milk, melted butter, and 1 beaten egg. Mix until a soft dough forms.

Step 3

Knead the dough on a lightly floured surface or using a stand mixer with a dough hook for about 8-10 minutes until smooth and elastic.

Step 4

Incorporate the raisins and mixed peel into the dough until evenly distributed.

Step 5

Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.

Step 6

Punch down the dough and divide it into 12 equal pieces. Shape each piece into a round bun and place them onto a parchment-lined baking sheet, leaving some space between each bun.

Step 7

Cover the buns loosely with plastic wrap and let them rise again for 30-45 minutes, or until they puff up.

Step 8

Preheat your oven to 190°C (375°F).

Step 9

Prepare the cross paste by mixing 50 grams of flour with 4 tablespoons of water to form a thick, smooth paste. Transfer it to a piping bag or a zip-top bag with a small corner snipped off.

Step 10

Pipe a cross over the top of each bun.

Step 11

Bake the buns in the preheated oven for 18-20 minutes or until golden brown.

Step 12

While the buns are baking, gently heat the apricot jam in a small saucepan until it becomes runny. Strain if necessary to remove any fruit pieces.

Step 13

Once the buns are done, brush them with the warm apricot jam glaze while still hot for a glossy finish.

Step 14

Allow the buns to cool slightly before serving. Enjoy them as is or split and spread with butter!
