Ingredients

  • 150 grams unsalted butter
  • 200 grams all-purpose flour
  • 50 grams granulated sugar
  • 200 grams granulated sugar (filling)
  • 30 grams all-purpose flour (filling)
  • 3 count large eggs
  • 120 milliliters freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon powdered sugar (for topping)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving an overhang for easy removal.

Step 2

In a medium bowl, combine the 150g of unsalted butter, 200g of all-purpose flour, and 50g of granulated sugar. Mix with a fork or your hands until the mixture resembles coarse crumbs.

Step 3

Press the mixture evenly into the bottom of the prepared baking pan to form the crust. Use the back of a spoon or your hands to smooth it out.

Step 4

Bake the crust in the preheated oven for 15 minutes or until lightly golden. Remove from the oven and allow it to cool slightly while you prepare the filling.
