Ingredients

  • 3 lbs beef chuck roast
  • 2 cups baby carrots
  • 4 medium gold potatoes
  • 1 large yellow onion
  • 2 cups beef broth
  • 3 tbsp Worcestershire sauce
  • 3 large garlic cloves
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil

Directions

Step 1

Season the beef chuck roast on both sides with kosher salt and black pepper.

Step 2

In a large skillet, heat olive oil over medium-high heat. Sear the roast for 3-4 minutes on each side until browned. This step is optional but adds great flavor.

Step 3

Peel and chop the yellow onion into large chunks. Wash and halve the gold potatoes. Mince the garlic cloves.

Step 4

Place the baby carrots, chopped onion, and halved potatoes in an even layer at the bottom of the crock pot.

Step 5

Place the seared beef chuck roast on top of the vegetables in the crock pot.

Step 6

In a medium mixing bowl, combine beef broth, Worcestershire sauce, minced garlic, dried thyme, and dried rosemary. Stir well and pour the mixture over the roast and vegetables.

Step 7

Cover the crock pot with the lid and cook on LOW heat for 8 hours or on HIGH heat for 4-5 hours, until the beef is tender and easily pulls apart with a fork.

Step 8

Once cooked, taste the broth and adjust seasonings with additional salt or pepper as desired.

Step 9

Serve the beef roast with the vegetables and spoon some of the savory broth over the top. Enjoy your delicious and easy meal!
