Ingredients

  • 200 grams Ground almonds (almond flour)
  • 180 grams Granulated sugar
  • 2 large Egg whites
  • 1 teaspoon Almond extract
  • 30 grams Powdered sugar (for coating)

Directions

Step 1

Preheat your oven to 170°C (340°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the ground almonds and granulated sugar. Mix until well combined.

Step 3

In a separate bowl, lightly beat the egg whites until frothy but not stiff.

Step 4

Add the beaten egg whites and almond extract to the dry mixture. Stir everything together until a soft, sticky dough forms.

Step 5

Using your hands, roll small portions of the dough into 1-inch balls and place them onto the prepared baking sheet, leaving about 2 cm (1 inch) of space between each ball.

Step 6

Roll each ball in powdered sugar to coat them evenly before placing them back onto the baking sheet.

Step 7

Bake the cookies in the preheated oven for 12-15 minutes, or until the tops are lightly cracked and the edges are set. They should still be soft to the touch in the center.

Step 8

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve and enjoy your homemade amaretti cookies with a cup of coffee or tea. Store leftovers in an airtight container for up to a week.
