Ingredients

  • 12 ounces Spaghetti
  • 1 pound Raw shrimp (peeled and deveined)
  • 3 tablespoons Olive oil
  • 3 units Garlic cloves (minced)
  • 1 cup Fresh basil leaves (chopped)
  • 2 tablespoons Lemon juice
  • 1 cup Parmesan cheese (grated)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 4 quarts Water

Directions

Step 1

Fill a large pot with 4 quarts of water, add 1 teaspoon of salt, and bring to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes, or until fragrant (do not let it brown).

Step 4

Increase the heat to medium-high and add the shrimp to the skillet. Season the shrimp with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Cook for 2-3 minutes on each side until the shrimp is opaque and cooked through. Remove the shrimp from the skillet and set aside.

Step 5

In the same skillet, add the remaining 1 tablespoon of olive oil along with 1/2 cup of the reserved pasta water. Stir to deglaze the pan, scraping up any browned bits.

Step 6

Reduce the heat to low and return the cooked shrimp to the skillet. Add the cooked spaghetti, chopped basil, and lemon juice, tossing everything together to combine.

Step 7

Stir in the grated Parmesan cheese and, if desired, the crushed red pepper flakes for a bit of heat. Adjust the seasoning with more salt or pepper, to taste.

Step 8

Serve immediately, garnished with extra basil leaves and more grated Parmesan, if desired.
