Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 large yellow onion
  • 4 cloves garlic cloves
  • 4 medium carrots
  • 4 medium potatoes
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 3 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Directions

Step 1

Season the beef chuck roast on all sides with salt and black pepper.

Step 2

Heat the olive oil in a large skillet or frying pan over medium-high heat.

Step 3

Sear the chuck roast for 3-4 minutes on each side until browned. Set the roast aside.

Step 4

Peel and slice the onion into thick wedges. Mince the garlic cloves. Peel the carrots and potatoes, then cut them into large chunks.

Step 5

Layer the sliced onion at the bottom of a large slow cooker or Dutch oven.

Step 6

Place the seared chuck roast on top of the onion slices.

Step 7

Arrange the carrots, potatoes, and minced garlic around the roast.

Step 8

In a mixing bowl, combine the beef broth and Worcestershire sauce. Pour the mixture over the roast and vegetables.

Step 9

Add the fresh thyme and rosemary sprigs to the slow cooker or Dutch oven for aromatics.

Step 10

Cover and cook on LOW heat for 8 hours or on HIGH heat for 4-5 hours in a slow cooker. If using a Dutch oven, bake at 300°F (150°C) for 4 hours.

Step 11

Once the meat is tender and easily pulls apart, remove the pot roast from the cooker and serve with the vegetables and gravy.
