  • 1 tablespoon Shaoxing wine or dry sherry
  • 3 tablespoons vegetable oil
  • 3 cloves fresh garlic, minced
  • 4 scallions, cut into 2-inch pieces
  • 200 grams bean sprouts
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground white pepper

Directions

Step 1

Soak the wide rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

Step 2

Slice the chicken breast into thin strips. In a bowl, combine 1 tablespoon soy sauce, 1 teaspoon cornstarch, and the Shaoxing wine. Add the chicken strips and toss to coat. Let the chicken marinate for about 15 minutes.

In a small bowl, mix the remaining soy sauce, oyster sauce, dark soy sauce, and 1 teaspoon cornstarch with 2 tablespoons of water to create the sauce. Set aside.
