Ingredients

  • 4 large Russet potatoes
  • 6 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 2 Garlic cloves
  • 1 sprig Fresh thyme (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 cups Parmesan cheese (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a rack in the middle of the oven.

Wash and scrub the potatoes thoroughly to remove any dirt. Pat them dry with a clean kitchen towel.

Step 3

Place a potato on a cutting board. Using two chopsticks or wooden spoons placed parallel to the potato on both sides, thinly slice the potato approximately 1/8-inch apart, being careful not to cut all the way through. The chopsticks will help stop the knife. Repeat with all potatoes.

Melt the butter in a small saucepan over low heat. Add olive oil, minced garlic (optional for added flavor), and thyme. Heat for 1–2 minutes to infuse the butter with the aroma, then remove from heat.
