Ingredients

  • 120 grams unsalted butter
  • 100 grams granulated sugar
  • 50 grams light brown sugar
  • 1 piece large egg
  • 2 teaspoons vanilla extract
  • 120 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoons salt
  • 150 grams butterscotch chips
  • 100 grams salted peanuts, roughly chopped
  • 1 teaspoon coarse sea salt (optional, for garnish)

Directions

Step 1

Preheat your oven to 175°C (350°F). Line an 8x8 inch (20x20 cm) baking pan with parchment paper, leaving a slight overhang on the sides for easy removal.

Step 2

In a medium mixing bowl, melt the butter in the microwave or on the stove. Allow it to cool slightly.

Step 3

Whisk in the granulated sugar and light brown sugar until well combined and smooth.

Step 4

Add the egg and vanilla extract to the mixture. Whisk until fully incorporated.

Step 5

In a separate mixing bowl, whisk together the flour, baking powder, and salt.

Step 6

Gradually fold the dry ingredients into the wet ingredients using a spatula, mixing just until the batter comes together. Be careful not to overmix.

Step 7

Stir the butterscotch chips and roughly chopped salted peanuts into the batter until evenly distributed.

Step 8

Pour the batter into the prepared baking pan. Spread it evenly with the spatula.

Step 9

Bake for 20-25 minutes, or until the edges are set and golden brown. The center should be slightly soft but not wet.

Step 10

Remove the pan from the oven and sprinkle with a pinch of coarse sea salt, if desired. Allow the bars to cool completely in the pan before lifting them out using the parchment overhang.

Step 11

Once cooled, cut into 16 squares or your preferred size, and serve.
