Ingredients

  • 2 cups Heavy cream
  • 1 cup Brown sugar
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Golden syrup (or light corn syrup)
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Salt
  • 0.5 cup Amarula (cream liqueur)
  • 1 teaspoon Gelatin powder
  • 3 tablespoons Cold water
  • 1 cup Whipped cream (optional, for topping)
  • 2 tablespoons Butterscotch chips (optional, for garnish)

Directions

Step 1

In a small bowl, sprinkle gelatin powder over cold water and let it bloom for 5 minutes.

Step 2

In a medium saucepan, combine brown sugar, unsalted butter, and golden syrup. Cook over medium heat, stirring constantly, until the mixture begins to bubble and becomes smooth.

Step 3

Slowly add the heavy cream to the saucepan while stirring. Continue cooking for 3-5 minutes, allowing the mixture to thicken slightly.

Step 4

Remove the saucepan from heat, then stir in the vanilla extract and salt.

Step 5

While the butterscotch mixture is still warm, stir in the bloomed gelatin until fully dissolved.

Step 6

Let the mixture cool to room temperature for about 10 minutes before whisking in the Amarula cream liqueur.

Step 7

Divide the mixture evenly among 6 serving glasses or dessert cups.

Step 8

Refrigerate the servings for at least 4 hours or until fully set.

Step 9

Before serving, optionally top each dessert with whipped cream and a sprinkle of butterscotch chips for garnish.
