Ingredients

  • 2 cups Butternut squash (cubed)
  • 1 cup Heavy cream
  • 1 cup Whole milk
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 3 Large eggs
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 1 Pie crust (store-bought or homemade)
  • 1 cup Whipped cream (optional for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the cubed butternut squash on a baking sheet and roast for 20-25 minutes, or until tender. Allow it to cool slightly.

Step 3

Transfer the roasted butternut squash to a blender or food processor. Add the heavy cream and milk, then blend until smooth and creamy.

Step 4

In a large mixing bowl, whisk together the granulated sugar, brown sugar, eggs, cinnamon, nutmeg, vanilla extract, and salt.

Step 5

Gradually add the butternut mixture to the bowl, whisking continuously until fully combined.

Step 6

Roll out the pie crust and fit it into a 9-inch pie dish. Trim any excess crust and crimp the edges as desired.

Step 7

Pour the butternut filling into the prepared pie crust, spreading it evenly.

Step 8

Reduce the oven temperature to 375°F (190°C) and bake the pie for 45-50 minutes, or until the filling is set and slightly puffed. A knife inserted in the center should come out clean.

Step 9

Allow the pie to cool completely on a wire rack before serving. This will help the filling set further.

Step 10

Slice and serve with a dollop of whipped cream on top, if desired.
