Ingredients

  • 4 pieces Large eggs
  • 1 cup Buttermilk
  • 2 tablespoons Heavy cream
  • 1 tablespoon Unsalted butter
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Fresh chives
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Parmesan cheese (grated)
  • 0.25 teaspoons Paprika (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease an oven-safe baking dish or two small ramekins with the unsalted butter.

Step 2

In a small bowl, whisk together the buttermilk, heavy cream, salt, and black pepper until well combined.

Step 3

Pour a thin layer of the buttermilk mixture into the prepared baking dish, just enough to cover the bottom.

Step 4

Carefully crack the eggs, one at a time, and gently slide them into the dish or ramekins without breaking the yolks. Space them evenly.

Step 5

Pour the remaining buttermilk mixture around the eggs, avoiding covering the yolks completely.

Step 6

Sprinkle the grated Parmesan cheese over the top, followed by the chopped parsley and chives.

Step 7

Place the dish on the middle rack of the oven and bake for 12-15 minutes, or until the egg whites are set but the yolks remain runny. Adjust the cooking time if you prefer firmer yolks.

Step 8

Remove the dish from the oven and let it cool for 2 minutes. Optionally, sprinkle paprika over the top for color and added flavor.

Step 9

Serve immediately with toasted slices of crusty bread or a side salad. Enjoy!
