Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cups cremini or white mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon all-purpose flour
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Place each chicken breast on a cutting board and butterfly them by slicing horizontally through the thickest part, being careful not to cut all the way through. Open the breast like a book, then gently pound to an even thickness using a meat mallet.

Step 2

Season the butterflied chicken breasts with salt and black pepper on both sides.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Add the sliced mushrooms and sauté for 5-6 minutes, or until the mushrooms are softened and slightly browned.

Step 5

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 6

Sprinkle the flour over the mushrooms and stir well, cooking for an additional minute to remove the raw flour taste.

Step 7

Slowly pour in the chicken broth while stirring to avoid lumps, then add the heavy cream. Bring the mixture to a simmer.

Step 8

Add the fresh thyme leaves and adjust the seasoning with more salt and black pepper as needed.

Step 9

Return the cooked chicken to the skillet, spooning the mushroom sauce over the top. Cook for 3-4 minutes, allowing the flavors to meld and the chicken to heat through.

Step 10

Garnish with fresh parsley and serve hot. Pair with mashed potatoes, rice, or steamed vegetables for a complete meal.
