  • 1 piece Whole chicken
  • 3 tablespoons Olive oil
  • 3 pieces Garlic cloves, minced
  • 2 tablespoons Lemon juice
  • 1 tablespoon Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 1 teaspoon Paprika
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Unsalted butter, melted

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Place the chicken breast-side down on a cutting board. Using sharp kitchen shears, cut along both sides of the backbone to remove it. Flip the chicken over and press down firmly on the breastbone to flatten the chicken. This is known as butterflying or spatchcocking.

In a small bowl, mix olive oil, minced garlic, lemon juice, chopped rosemary, chopped thyme, paprika, kosher salt, and ground black pepper until well combined.

Pat the butterflied chicken dry with paper towels to remove excess moisture. Brush or rub the seasoning mixture evenly over both sides of the chicken, ensuring it is well coated.
