Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 6 cups fresh spinach leaves
  • 2 cloves garlic
  • 0.5 medium onion
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Rinse the white rice under cold water in a fine-mesh strainer until the water runs clear.

Step 2

In a medium saucepan, combine the rice, 2 cups of water, and 1 teaspoon of salt. Bring to a boil over medium heat.

Step 3

Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes. Remove from heat and let sit, covered, for another 5 minutes.

Step 4

While the rice is cooking, prepare the spinach. Rinse the spinach leaves thoroughly and pat them dry.

Step 5

Finely mince the garlic cloves and dice half of the onion.

Step 6

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and diced onion. Sauté for 2-3 minutes until fragrant and translucent.

Step 7

Add the spinach to the skillet in batches, stirring frequently. Cook for 3-4 minutes until the spinach is wilted and softened. Season with 1/2 teaspoon of black pepper.

Step 8

Once the rice is ready, fluff it with a fork and add it to the skillet with the spinach mixture.

Step 9

Add 3 tablespoons of butter to the skillet and stir until the butter is fully melted and evenly coats the rice and spinach.

Step 10

Taste and adjust seasoning with additional salt or pepper if needed.

Step 11

Remove from heat and serve warm. Enjoy your Buttered Spinach and Rice as a side dish or light main course!
