Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter
  • 0.75 cups granulated sugar
  • 0.25 cups dark brown sugar
  • 2 large eggs
  • 1 teaspoons vanilla extract
  • 3 tablespoons dark rum
  • 0.5 cups milk
  • 0.5 cups powdered sugar
  • 1 tablespoons dark rum (for glaze)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease the tin thoroughly.

Step 2

In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.

Step 3

In a large bowl, cream the butter, granulated sugar, and dark brown sugar until light and fluffy. This will take about 2-3 minutes using an electric mixer.

Step 4

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and dark rum until combined.

Step 5

Gradually add the dry ingredients to the wet ingredients in three additions, alternating with the milk. Begin and end with the dry ingredients, mixing until just incorporated. Do not overmix.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Step 7

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

While the muffins cool, prepare the rum glaze. In a small bowl, whisk together the powdered sugar and 1 tablespoon of dark rum until smooth. If the glaze is too thick, add a few drops of water to reach your desired consistency.

Step 10

Once the muffins are completely cool, drizzle the rum glaze over the tops of the muffins.

Step 11

Serve immediately or store in an airtight container at room temperature for up to 3 days.
