Ingredients

  • 400 g butter beans (canned, drained and rinsed)
  • 200 g bacon strips
  • 200 g button mushrooms, sliced
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tbsp all-purpose flour
  • 250 ml chicken or vegetable stock
  • 150 g sour cream
  • 1 tsp paprika
  • 2 tbsp parsley, chopped (for garnish)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Chop the bacon into bite-sized pieces and fry in the skillet until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Step 3

Add the unsalted butter to the skillet along with the chopped onion and cook until softened, about 3-4 minutes.

Step 4

Stir in the garlic and cook for another 30 seconds until fragrant.

Step 5

Add the sliced mushrooms to the skillet and cook for 5-6 minutes, stirring occasionally, until they release their moisture and begin to brown.

Step 6

Sprinkle the flour over the vegetables and stir well to coat. Cook for 1-2 minutes to eliminate the raw flour taste.

Step 7

Gradually pour in the stock, stirring constantly to create a smooth sauce. Bring the mixture to a simmer and cook for 3-4 minutes until slightly thickened.

Step 8

Stir in the sour cream and paprika, then season with salt and black pepper to taste.

Step 9

Add the drained butter beans and cooked bacon to the sauce, stirring gently until everything is well-coated and heated through.

Step 10

Remove the skillet from heat and garnish with fresh parsley before serving.

Step 11

Serve the Butter Beans and Bacon Stroganoff over rice, pasta, or with crusty bread for a satisfying meal.
