Ingredients

  • 1 lb ground beef (80/20 blend)
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tbsp vegetable oil
  • 1 yellow onion, thinly sliced
  • 1 tbsp butter
  • 0.25 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp pickle juice
  • 4 brioche burger buns
  • 4 cheddar cheese slices
  • 4 leaves lettuce
  • 4 tomato slices
  • 8 slices pickles, sliced

Directions

Step 1

In a large mixing bowl, combine the ground beef, salt, black pepper, garlic powder, and onion powder. Mix gently until just combined. Divide into 4 equal portions and shape into patties, about ¾ inch thick. Press a small indentation in the center of each patty with your thumb to prevent puffing during cooking.

Step 2

Heat a skillet or grill pan over medium-high heat. Add the vegetable oil and swirl to coat. Cook the patties for 3-4 minutes on one side or until well-browned. Flip, top each with a cheese slice, and cook for another 3-4 minutes until the cheese melts and the patties are cooked to your desired doneness. Remove from skillet and rest for 3-5 minutes.

Step 3

In the same skillet, add the butter and let it melt over medium heat. Add the thinly sliced onions and cook for 8-10 minutes, stirring occasionally, until caramelized and golden brown. Remove from skillet and set aside.

Step 4

In a small bowl, prepare the special sauce by mixing the mayonnaise, ketchup, Dijon mustard, and pickle juice until smooth. Taste and adjust seasoning, if necessary.

Step 5

Toast the brioche buns on a dry skillet or under the broiler for 1-2 minutes until golden brown.

Step 6

Assemble the burgers: Spread a generous layer of the special sauce on the bottom bun. Add a lettuce leaf, followed by a slice of tomato, a cooked patty with melted cheese, caramelized onions, a couple of pickle slices, and finally the top bun.

Step 7

Serve immediately with your favorite side dishes like French fries or a fresh salad. Enjoy your gourmet burgers with a special twist!
