Ingredients

  • 2 cups Fresh spinach leaves
  • 8 pieces Cherry tomatoes
  • 0.5 Cucumber
  • 0.25 Red onion
  • 1 piece Egg
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Feta cheese (optional)

Directions

Step 1

Wash and pat dry the spinach leaves, and place them in a medium-sized salad bowl.

Step 2

Slice the cherry tomatoes in half and thinly slice the cucumber and red onion. Add them to the bowl with the spinach.

Step 3

In a small mixing bowl, whisk together the olive oil, lemon juice, salt, and black pepper to make the dressing. Drizzle the dressing over the salad and gently toss to coat the vegetables evenly.

Step 4

Heat a non-stick skillet over medium heat and lightly grease it with a few drops of olive oil.

Step 5

Crack the egg into the skillet and cook until the whites are set but the yolk remains runny (approximately 3-4 minutes). If you prefer a firmer yolk, cook for an additional minute.

Step 6

Carefully transfer the sunny-side-up egg (the ‘bull’s eye’) onto the center of the salad.

Step 7

Optional: Sprinkle crumbled feta cheese over the top for added flavor.

Step 8

Serve immediately and enjoy your delicious Bulls Eye Salad!
