Ingredients

  • 500 g Button or cremini mushrooms
  • 120 g All-purpose flour
  • 30 g Cornstarch
  • 250 ml Unsweetened plant-based milk (or dairy milk)
  • 150 g Breadcrumbs (panko recommended)
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 120 ml Buffalo sauce
  • 60 g Unsalted butter (or plant-based butter)
  • 500 ml Oil for frying (vegetable, canola, or sunflower)
  • 0 optional Ranch or blue cheese dressing (optional, for serving)
  • 0 optional Celery sticks (optional, for serving)

Directions

Step 1

Clean the mushrooms by wiping them with a damp paper towel or brushing off any dirt. Trim the stems if necessary, but leave them mostly intact for easy handling.

Step 2

In a medium bowl, mix the all-purpose flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.

Step 3

Gradually whisk the plant-based milk into the dry mixture until it forms a smooth and thick batter.

Step 4

Place the breadcrumbs in a shallow dish for coating.

Step 5

Dip each mushroom into the batter, ensuring it is fully coated, then roll it in the breadcrumbs, pressing lightly to adhere. Set aside on a plate or baking tray.

Step 6

Heat the oil in a deep skillet or saucepan over medium heat until it reaches approximately 180°C (350°F). You can test the oil by dropping in a small piece of batter—it should sizzle and float to the surface.

Step 7

Fry the mushrooms in batches, making sure not to overcrowd the pan. Cook for 3–4 minutes, turning occasionally, until they are golden brown and crispy. Remove the fried mushrooms with a slotted spoon and drain them on paper towels.

Step 8

In a small saucepan, melt the butter over low heat, then stir in the buffalo sauce until fully combined. Remove from heat.

Step 9

Toss the fried mushrooms in the buffalo sauce mixture until evenly coated.

Step 10

Serve immediately with ranch or blue cheese dressing and celery sticks on the side, if desired.
