Ingredients

  • 130 grams Buckwheat flour
  • 300 milliliters Water
  • 1 large Eggs
  • 0.5 teaspoons Salt
  • 10 grams Unsalted butter
  • 100 grams Ham (optional, for filling)
  • 100 grams Cheese (optional, for filling)
  • 2 large Eggs (for filling, optional)

Directions

Step 1

In a large mixing bowl, combine the buckwheat flour and salt.

Step 2

Gradually whisk in the water until the mixture is smooth and lump-free.

Step 3

Add the egg to the batter and whisk until fully incorporated. The batter should be thin and runny. If it's too thick, add a little more water, one tablespoon at a time.

Step 4

Cover the bowl with a clean kitchen towel and let the batter rest for at least 30 minutes at room temperature (optional but recommended for a smoother texture).

Step 5

Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the skillet with a small amount of unsalted butter.

Step 6

Once the pan is hot, pour a ladleful of batter into the center of the pan and swirl to evenly coat the surface with a thin layer.

Step 7

Cook the galette for 1-2 minutes, or until the edges start to lift and the bottom is golden brown. Flip the galette carefully and cook for another 1 minute on the other side.

Step 8

If adding fillings, place slices of ham, cheese, or crack an egg in the center of the galette while it cooks on the second side. Fold the edges of the galette toward the center to create a square or envelope shape, leaving the filling visible in the middle. Cook until the filling is warmed through and the egg white is set.

Step 9

Repeat with the remaining batter, greasing the skillet as needed between galettes.

Step 10

Serve warm with your choice of fillings or toppings. Bon appétit!
