Ingredients

  • 1 cup Buckwheat flour
  • 0.5 cup All-purpose flour
  • 1.5 cups Milk
  • 0.5 cup Water
  • 3 large Eggs
  • 2 tablespoons Unsalted butter (melted)
  • 0.25 teaspoon Salt
  • 3 medium Apples (peeled, cored, and sliced)
  • 2 tablespoons Unsalted butter (for apples)
  • 3 tablespoons Brown sugar
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Nutmeg (optional)
  • 1 tablespoon Powdered sugar (for garnish)

Directions

Step 1

In a large mixing bowl, combine buckwheat flour, all-purpose flour, milk, water, eggs, melted butter, and salt. Whisk until the batter is smooth and free of lumps. Cover the bowl and let the batter rest for 20 minutes.

Step 2

While the batter is resting, prepare the apples. Heat 2 tablespoons of butter in a large skillet over medium heat. Add the sliced apples, brown sugar, cinnamon, and nutmeg (if using). Cook for 8-10 minutes, stirring occasionally, until the apples are tender and caramelized. Remove from heat and set aside.

Step 3

Heat a non-stick crepe pan or skillet over medium heat. Lightly grease with butter or a small amount of oil. Pour about 1/4 cup of batter into the pan and swirl to coat the bottom evenly.

Step 4

Cook the crepe for 1-2 minutes, or until the bottom is golden brown. Flip the crepe carefully and cook the other side for another 1 minute. Transfer the cooked crepe to a plate and cover with a clean kitchen towel to keep warm. Repeat with the remaining batter.

Step 5

To assemble, place a crepe on a plate and spoon a generous amount of the spiced apple filling onto one half. Fold the crepe over, then fold again into a quarter shape. Repeat with the remaining crepes and apples.

Step 6

Dust the assembled crepes with powdered sugar and serve warm. Enjoy!
