Ingredients

  • 200 g buckwheat flour
  • 50 g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp salt
  • 60 g unsalted butter, chilled and cubed
  • 2 tbsp honey
  • 120 ml milk (dairy or plant-based)
  • 1 medium apple (peeled, cored, and grated)
  • 30 g walnuts (chopped, optional)
  • 1 large egg (for egg wash, optional)

Directions

Step 1

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the buckwheat flour, all-purpose flour, baking powder, ground cinnamon, and salt.

Step 3

Add the chilled, cubed butter into the bowl. Using your fingertips or a pastry cutter, rub the butter into the dry ingredients until the mixture resembles breadcrumbs.

Step 4

Stir in the honey and milk, mixing gently until just combined. Do not overmix.

Step 5

Fold in the grated apple and chopped walnuts if using. The dough will be slightly sticky but manageable.

Step 6

On a clean, lightly floured surface, shape the dough into a rough rectangle about 1.5 cm (1/2 inch) thick.

Step 7

Roll the dough tightly from the longer side into a log. Slice the log into 8 even pieces.

Step 8

Place the rolls cut side up onto the prepared baking sheet, leaving some space between each roll to allow them to expand while baking.

Step 9

If using an egg wash, beat the egg lightly and brush over the tops of the rolls for a golden finish.

Step 10

Bake in the preheated oven for 22 to 25 minutes, or until the rolls are golden brown and cooked through.

Step 11

Allow the rolls to cool slightly on the baking sheet before serving warm.
