Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoons baking soda
  • 0.25 teaspoons salt
  • 0.5 cups unsalted butter, softened
  • 1 cups granulated sugar
  • 2 large eggs
  • 1 teaspoons vanilla extract
  • 1 ripe pear, peeled and finely grated
  • 0.5 cups sparkling wine
  • 0.25 cups whole milk
  • 2 cups powdered sugar
  • 3 tablespoons sparkling wine (for frosting)
  • 0.5 cups unsalted butter, softened (for frosting)
  • 2 tablespoons decorative sprinkles (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup cupcake pan with paper liners.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs to the butter and sugar mixture one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

Fold the grated pear into the batter until evenly distributed.

Step 6

Alternate adding the dry flour mixture and the sparkling wine to the batter, beginning and ending with the flour mixture. Stir in the milk until just combined. Do not overmix.

Step 7

Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the cupcakes from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

To prepare the frosting, beat the softened butter with an electric mixer until smooth and creamy.

Step 11

Gradually add the powdered sugar, one cup at a time, mixing on low speed and then increasing to high as the sugar incorporates.

Step 12

Mix in the sparkling wine, one tablespoon at a time, until the frosting reaches a soft, spreadable consistency.

Step 13

Once the cupcakes have cooled completely, frost them generously with the sparkling wine frosting using a piping bag or offset spatula.

Step 14

Top with decorative sprinkles, if desired, and serve immediately or store in an airtight container at room temperature for up to 2 days.
