Ingredients

  • 2 cups long-grain white rice
  • 4 cups chicken stock
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 8 ounces andouille sausage
  • 1 pound shrimp (peeled and deveined)
  • 1 medium yellow onion
  • 1 medium green bell pepper
  • 2 stalks celery stalks
  • 4 cloves garlic cloves
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 stalks green onions
  • 2 tablespoons fresh parsley

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Set aside.

Step 2

In a large pot or Dutch oven, heat the butter and olive oil over medium heat.

Slice the andouille sausage into round pieces and add them to the pot. Cook until browned on both sides, about 4–5 minutes. Remove the sausage and set aside.

In the same pot, add the shrimp. Cook for 1–2 minutes on each side until pink and just cooked through. Remove and set aside.

Dice the onion, green bell pepper, and celery. Mince the garlic. Add these vegetables to the pot and cook for 5–6 minutes until softened.
