Ingredients

  • 125 g Unsalted butter
  • 200 g Granulated sugar
  • 50 g Light brown sugar
  • 2 large Eggs
  • 2 tsp Vanilla extract
  • 95 g All-purpose flour
  • 30 g Cocoa powder
  • 0.25 tsp Salt
  • 100 g Chocolate chips
  • 200 g Dark chocolate (melted for coating)
  • 50 g Sprinkles or decorations
  • 20 pieces Lollipop sticks

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a square 8x8-inch baking dish with parchment paper.

Step 2

In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the granulated sugar and light brown sugar until combined.

Step 3

Allow the mixture to cool slightly, then whisk in the eggs one at a time, followed by the vanilla extract.

Step 4

In a separate bowl, sift together the flour, cocoa powder, and salt.

Step 5

Gradually fold the dry ingredients into the wet ingredients until a smooth batter forms. Stir in the chocolate chips.

Step 6

Pour the batter into the prepared baking dish and spread it evenly with a spatula.

Step 7

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the brownies to cool completely in the pan.

Step 8

Once cooled, crumble the brownies into a large bowl and mix until they can be shaped into balls. Each ball should be about 1 inch in diameter.

Step 9

Insert a lollipop stick into the center of each brownie ball and place them on a baking tray lined with parchment paper.

Step 10

Chill the brownie pops in the refrigerator for 30 minutes to firm up.

Step 11

Melt the dark chocolate in a microwave-safe bowl in 15-second intervals, stirring between each interval, until smooth.

Step 12

Dip each brownie pop into the melted chocolate, ensuring it is fully coated. Gently tap the stick on the edge of the bowl to remove any excess chocolate.

Step 13

Immediately decorate with sprinkles or your desired decorations while the chocolate coating is still wet.

Step 14

Place the coated brownie pops back onto the parchment-lined tray and allow them to set at room temperature or in the refrigerator.

Step 15

Serve and enjoy your delightful Brownie Lollipops!
