Ingredients

  • 115 grams Unsalted butter
  • 170 grams Semi-sweet chocolate chips
  • 200 grams Granulated sugar
  • 50 grams Light brown sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 95 grams All-purpose flour
  • 2 tablespoons Cocoa powder (unsweetened)
  • 0.25 teaspoon Salt
  • 50 grams Optional: Mini chocolate chips or chopped nuts

Directions

Step 1

Preheat the oven to 175°C (350°F) and line a 12-cup muffin tin with paper liners or lightly grease the cups with cooking spray.

Step 2

In a medium saucepan over low heat, melt the unsalted butter and semi-sweet chocolate chips together. Stir occasionally until smooth, then remove from heat and let it cool slightly.

Step 3

In a large mixing bowl, whisk together the granulated sugar, light brown sugar, and the slightly cooled melted chocolate mixture until well combined.

Step 4

Add the eggs one at a time, whisking well after each addition. Then stir in the vanilla extract.

Step 5

Sift the all-purpose flour, cocoa powder, and salt into the bowl with the wet ingredients. Gently fold everything together using a spatula until just combined. Be careful not to overmix.

Step 6

If desired, fold in mini chocolate chips or chopped nuts for added texture and flavor.

Step 7

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Step 8

Bake in the preheated oven for 18-22 minutes, or until the tops are set and a toothpick inserted into the center comes out with just a few moist crumbs.

Step 9

Remove the brownie cups from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 10

Serve the brownie cups as-is or topped with a scoop of ice cream or a drizzle of caramel sauce for an extra indulgent treat.
