Ingredients

  • 1.5 cups Wheat bran
  • 1 cup Buttermilk
  • 1 cup All-purpose flour
  • 0.5 cup Brown sugar
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Cinnamon
  • 1 large Egg
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins or chopped dates (optional)
  • 0.25 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the tin.

Step 2

In a large mixing bowl, combine the wheat bran and buttermilk. Stir and let sit for 5 minutes to allow the bran to soften.

Step 3

In a separate bowl, whisk together the all-purpose flour, brown sugar, baking soda, baking powder, salt, and cinnamon.

Step 4

To the bran and buttermilk mixture, add the egg, vegetable oil, and vanilla extract. Stir until well combined.

Step 5

Gradually fold the dry ingredients into the wet mixture, stirring just until incorporated. Be careful not to overmix.

Step 6

If using raisins, chopped dates, or nuts, gently fold them into the batter.

Step 7

Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffin tin from the oven and let the muffins cool for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
