Ingredients

  • 250 grams Whole wheat flour
  • 100 grams All-purpose flour
  • 75 grams Rolled oats
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 50 grams Butter (cold, cubed)
  • 350 milliliters Buttermilk
  • 1 tablespoon Honey
  • 1 tablespoon Rolled oats (for topping)

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the whole wheat flour, all-purpose flour, rolled oats, baking soda, and salt.

Step 3

Add the cubed butter to the dry ingredients. Using your fingertips, rub the butter into the flour mixture until it resembles coarse breadcrumbs.

Step 4

In a medium bowl, whisk together the buttermilk and honey. Gradually pour the mixture into the dry ingredients, stirring with a wooden spoon or your hands until a soft, sticky dough forms. Avoid overmixing.

Step 5

Turn the dough out onto a lightly floured surface and gently shape it into a round loaf. Transfer the loaf onto the prepared baking sheet.

Step 6

Using a sharp knife, score a deep cross on the top of the loaf. This will help the bread bake evenly.

Step 7

Sprinkle the tablespoon of rolled oats over the top of the loaf for added texture and decoration.

Step 8

Bake in the preheated oven for 35-40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

Step 9

Remove from the oven and transfer to a wire rack to cool slightly before slicing. Serve warm or at room temperature with butter or your favorite toppings.
