Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 2 tablespoons fresh ginger, peeled and grated
  • 1 teaspoon turmeric powder
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 cup shiitake mushrooms, sliced
  • 6 cups vegetable broth
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon honey (optional, for sweetness)
  • 3 fresh thyme sprigs
  • 1 pinch cayenne pepper (optional, for heat)
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until soft and translucent.

Step 3

Stir in the minced garlic and grated ginger. Cook for another 1 minute, until fragrant.

Step 4

Add the turmeric powder, carrots, celery, and shiitake mushrooms. Stir well and cook for 5 minutes to soften the vegetables slightly.

Step 5

Pour in the vegetable broth and bring the mixture to a boil.

Step 6

Reduce the heat to low and add the fresh thyme sprigs. Let the broth simmer for 20 minutes to allow the flavors to meld.

Step 7

Remove the thyme sprigs and stir in the lemon juice and honey (if using). Add the cayenne pepper for a bit of heat, if desired.

Step 8

Season with sea salt and black pepper to taste.

Step 9

Ladle the broth into bowls, garnish with fresh parsley, and serve warm.

Step 10

Enjoy as a soothing remedy for respiratory discomfort or simply as a nourishing, comforting meal.
