Ingredients

  • 2 pieces steak (ribeye, New York strip, or filet mignon)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 4 tablespoons unsalted butter
  • 1 medium shallot, finely minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon lemon juice

Directions

Step 1

Preheat your oven's broiler on high. Place the oven rack in the top third of the oven, about 4-6 inches from the broiler element.

Step 2

Pat the steaks dry with paper towels to remove excess moisture. Brush both sides of each steak with olive oil and season generously with kosher salt and freshly cracked black pepper.

Step 3

Place the steaks on a broiler-safe pan or a wire rack set over a baking sheet to allow heat to circulate evenly.

Step 4

Broil the steaks for 4 minutes per side for medium-rare, or adjust the time according to your desired doneness. Use an instant-read thermometer: 130°F (54°C) for medium-rare, 140°F (60°C) for medium, or 150°F (66°C) for medium-well.

Step 5

While the steaks are broiling, prepare the shallot butter. In a small bowl, mix the unsalted butter, finely minced shallot, chopped parsley, and lemon juice until well combined. Set aside.

Step 6

Once the steaks are done cooking, remove them from the broiler. Tent them loosely with aluminum foil and let them rest for 5 minutes to allow the juices to redistribute.

Step 7

Top each steak with a generous dollop of shallot butter before serving. Serve hot with your favorite sides, such as roasted vegetables or mashed potatoes.
