Ingredients

  • 2 medium eggplant
  • 3 tablespoons olive oil
  • 2 cloves garlic
  • 8 leaves fresh basil leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parmesan cheese (optional)

Directions

Step 1

Preheat the broiler on high and position the oven rack about 6 inches from the heating element.

Step 2

Wash and dry the eggplants. Slice them crosswise into rounds about 1/2-inch thick.

Step 3

Line a baking sheet with aluminum foil and lightly grease it with a bit of olive oil to prevent sticking.

Step 4

Arrange the eggplant slices on the prepared baking sheet in a single layer, ensuring they do not overlap.

Step 5

Mince the garlic cloves finely and chop the fresh basil leaves into small pieces.

Step 6

In a small bowl, combine olive oil, minced garlic, salt, and black pepper. Mix well.

Step 7

Using a pastry brush or spoon, evenly coat each eggplant slice with the garlic olive oil mixture.

Step 8

Place the baking sheet under the broiler and cook for 5 minutes, or until the tops of the eggplants are golden brown.

Step 9

Remove the baking sheet, flip the eggplant slices, and brush the other side with any remaining olive oil mixture.

Step 10

Return the tray to the broiler and cook for another 4-5 minutes, until the eggplants are caramelized and tender.

Step 11

Remove the eggplant from the oven and sprinkle evenly with chopped fresh basil. If you’re using parmesan cheese, sprinkle it over the hot eggplant slices at this time.

Step 12

Serve warm as a side dish or over rice, pasta, or salad for a wholesome meal.
