Ingredients

  • 1 head (about 1 pound) Broccoli
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 cup Fresh bread crumbs
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Lemon zest
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Butter (optional)

Directions

Step 1

Prepare the broccoli by trimming it into bite-sized florets. Peel the tough outer layer of the stalk and slice the stalks into smaller pieces. Rinse thoroughly under cold running water.

Step 2

Fill a medium-sized pot with water and bring it to a boil. Add a pinch of salt. Once boiling, add the broccoli and blanch for 2-3 minutes until bright green and slightly tender. Immediately transfer to a bowl of ice water to stop the cooking process, then drain and set aside.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Mince the garlic cloves and sauté them for 30 seconds until fragrant, being careful not to burn them.

Step 4

Add the fresh bread crumbs to the skillet. Stir continuously for 3-4 minutes until the crumbs are golden brown and crispy.

Step 5

Chop the fresh parsley, then stir it into the bread crumbs along with the lemon zest, salt, and black pepper. If desired, stir in 1 tablespoon of butter for added richness. Remove the bread crumb mixture from the skillet and set aside.

Step 6

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the drained broccoli florets and stalk pieces. Toss for 3-4 minutes until warmed through and slightly crispy at the edges.

Step 7

Transfer the broccoli to a serving dish. Sprinkle the herbed bread crumbs generously over the top.

Step 8

Serve immediately as a side dish to complement your favorite main course.
