Ingredients

  • 500 g broccoli florets
  • 1 tbsp olive oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • 750 ml vegetable broth
  • 250 ml milk (low-fat)
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley (optional, for garnish)

Directions

Step 1

Wash the broccoli florets thoroughly and set them aside.

Step 2

Peel and finely chop the yellow onion and garlic cloves.

Step 3

Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until fragrant and translucent.

Step 4

Add the broccoli florets to the pot and stir well to coat them in the oil and aromatics.

Step 5

Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 10-12 minutes, or until the broccoli is tender.

Step 6

Remove the pot from the heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the mixture to a countertop blender and blend in batches.

Step 7

Return the soup to the pot over low heat. Stir in the low-fat milk, salt, and ground black pepper. Heat gently for 2-3 minutes without letting it come to a boil.

Step 8

Stir in the lemon juice for a bright, tangy flavor, and adjust the seasoning if needed.

Step 9

Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve hot and enjoy!
