Ingredients

  • 1 lb Pizza dough
  • 1 bunch Broccoli rabe
  • 3 tbsp Olive oil
  • 3 units Garlic cloves (minced)
  • 0.5 tsp Crushed red pepper flakes
  • 1.5 cups Mozzarella cheese (shredded)
  • 0.5 cups Parmesan cheese (grated)
  • 2 tbsp Cornmeal or flour (for dusting)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat your oven to 500°F (260°C) and place a pizza stone or baking sheet inside to heat.

Step 2

Trim the ends of the broccoli rabe and blanch it in boiling salted water for 1 minute. Drain and immediately transfer to an ice bath to stop the cooking. Pat the broccoli rabe dry and roughly chop it.

Step 3

Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Add the broccoli rabe, crushed red pepper flakes, salt, and black pepper. Cook for 3–4 minutes until the broccoli rabe is tender. Set aside to cool slightly.
