Ingredients

  • 500 grams Broccoli florets
  • 2 medium Yellow onion
  • 3 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 250 milliliters Milk
  • 150 grams Sharp cheddar cheese, shredded
  • 50 grams Parmesan cheese, grated
  • 75 grams Breadcrumbs
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Nutmeg (optional)

Directions

Step 1

Preheat your oven to 190°C (375°F). Grease a medium-sized baking dish and set it aside.

Step 2

Bring a large pot of salted water to a boil. Add the broccoli florets and blanch them for 2-3 minutes. Drain immediately and rinse with cold water to stop the cooking process. Set the broccoli aside.

Step 3

Peel and thinly slice the onions. In a large skillet over medium heat, melt 1 tablespoon of butter and add the sliced onions and a pinch of salt. Cook for 8-10 minutes, stirring occasionally, until the onions are soft and caramelized. Remove them from the skillet and set aside.

Step 4

In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Sprinkle in the flour and whisk constantly for 1 minute to form a roux.

Step 5

Gradually pour in the milk while whisking, ensuring there are no lumps. Cook for 2-3 minutes, stirring frequently, until the mixture begins to thicken.

Step 6

Reduce the heat to low and add the cheddar cheese, parmesan cheese, salt, black pepper, and nutmeg (if using). Stir until the cheese is fully melted and the sauce is smooth.

Step 7

In the prepared baking dish, layer the blanched broccoli and caramelized onions. Pour the cheese sauce evenly over the vegetables, ensuring everything is well coated.

Step 8

In a small bowl, combine the breadcrumbs with olive oil and a pinch of salt. Sprinkle the breadcrumb mixture evenly over the top of the cheese sauce.

Step 9

Bake the dish in the preheated oven for 20-25 minutes, or until the topping is golden brown and the sauce is bubbling.

Step 10

Allow the Broccoli Onion Au Gratin to rest for 5 minutes before serving.
