Ingredients

  • 12 oz Penne pasta
  • 2 pieces Chicken breast
  • 3 cups Broccoli florets
  • 2 tbsp Olive oil
  • 2 pieces Garlic cloves
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Basil pesto
  • 0.25 cup Grated Parmesan cheese
  • 0.25 cup Heavy cream
  • 0.25 tsp Red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts on both sides with salt and pepper, then add them to the skillet. Cook for 6-8 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest on a cutting board before slicing into bite-sized pieces.

In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Cook for 1 minute until fragrant, being careful not to burn the garlic.
