Ingredients

  • 3 cups broccoli florets
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 large eggs
  • 2 cups shredded cheddar cheese
  • 0.5 cup parmesan cheese, grated
  • 0.5 cup milk
  • 2 tablespoons unsalted butter, melted
  • 0.25 cup green onion, finely chopped
  • 2 cloves garlic, minced

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease and line a 9x13-inch baking pan with parchment paper.

Step 2

Bring a medium-sized pot of water to a boil. Add the broccoli florets and blanch for 2-3 minutes until tender but still bright green. Drain and set aside to cool. Once cooled, finely chop the broccoli.

Step 3

In a medium mixing bowl, whisk together the flour, baking powder, salt, and black pepper.

Step 4

In a separate large bowl, whisk the eggs with the milk and melted butter. Stir in the shredded cheddar cheese, grated parmesan, chopped green onion, and minced garlic.

Step 5

Gradually fold the dry ingredients into the wet mixture until combined. Do not overmix.

Step 6

Gently fold the chopped broccoli into the batter until evenly distributed.

Step 7

Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Step 9

Remove the pan from the oven and allow it to cool for 10 minutes. Use the parchment paper to lift the dish out of the pan and transfer it to a cutting board.

Step 10

Cut the cooled dish into squares and serve warm or at room temperature. Enjoy!
