Ingredients

  • 2 cups broccoli
  • 1.5 cups carrots
  • 1 medium onion
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons ground nutmeg
  • 2 tablespoons parsley (optional, for garnish)

Directions

Step 1

Wash the broccoli and carrots thoroughly. Cut the broccoli into florets and dice the carrots into small pieces for even cooking.

Step 2

Peel and finely chop the onion. Mince the garlic cloves.

Step 3

Heat olive oil in a large pot over medium heat. Add the chopped onion and cook for 3-4 minutes until softened.

Step 4

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 5

Add the diced carrots, broccoli florets, vegetable broth, salt, black pepper, and ground nutmeg to the pot. Stir everything together.

Step 6

Bring the mixture to a boil, then reduce to a simmer. Cover the pot with a lid and cook for 15-20 minutes, or until the vegetables are tender.

Step 7

Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, blend in batches using a countertop blender, making sure not to overfill it.

Step 8

Return the pureed soup to low heat. Stir in the heavy cream and warm through for 2-3 minutes. Taste and adjust seasoning as needed.

Step 9

Ladle the soup into bowls and garnish with chopped parsley if desired. Serve warm and enjoy!
