Ingredients

  • 500 g broccoli florets
  • 400 g cannellini beans (drained and rinsed)
  • 1 medium, diced onion
  • 2 minced garlic cloves
  • 2 tbsp olive oil
  • 250 ml vegetable stock
  • 100 ml heavy cream
  • 150 g cheddar cheese (grated)
  • 100 g breadcrumbs
  • 2 tbsp butter (melted)
  • 1 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Preheat your oven to 190°C (375°F). Grease a 9x13 baking dish and set aside.

Bring a large pot of salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 4-5 minutes.
