Ingredients

  • 500 g broccoli
  • 30 g unsalted butter
  • 1 medium onion
  • 2 garlic cloves
  • 750 ml vegetable stock
  • 150 g Stilton cheese
  • 100 ml double cream
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Start by preparing the broccoli. Trim the broccoli and cut into small florets. Peel the thick stems and cut into smaller chunks.

Step 2

Peel and finely chop the onion, and crush or finely chop the garlic cloves.

Step 3

In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and cook gently for 5 minutes until the onion becomes translucent and soft, but not browned.

Step 4

Add the broccoli to the pot and pour in the vegetable stock. Bring to a boil, then reduce the heat and let it simmer for 10-15 minutes, or until the broccoli is tender.

Step 5

Remove the pot from the heat and allow it to cool slightly. Using a blender or an immersion blender, blend the soup until smooth and creamy.

Step 6

Return the pot to a low heat. Crumble the Stilton cheese into the soup and stir until it has melted completely.

Step 7

Stir in the double cream and season the soup with salt and black pepper to taste.

Step 8

Continue heating gently for another 5 minutes, but do not allow the soup to boil.

Step 9

Ladle the soup into bowls and serve hot with crusty bread on the side, if desired.
