Ingredients

  • 12 oz Penne pasta
  • 3 cups Broccoli florets
  • 4 tablespoons Unsalted butter
  • 2 cups Heavy cream
  • 1 cup Parmesan cheese
  • 3 Garlic cloves, minced
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Fill a large pot with water, add a generous pinch of salt, and bring it to a boil over high heat.

Step 2

Add the penne pasta to the boiling water and cook according to the package instructions, or until al dente. Reserve 1 cup of pasta water before draining.

Step 3

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the broccoli florets and sauté for 4-5 minutes until they are tender but still vibrant green. Remove the broccoli from the skillet and set aside.

Step 4

In the same skillet, melt 4 tablespoons of unsalted butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 5

Lower the heat and stir in the heavy cream. Cook for 2-3 minutes while stirring occasionally to combine.

Step 6

Gradually whisk in the Parmesan cheese until the sauce becomes smooth and creamy. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 7

Add the cooked broccoli back into the skillet with the Alfredo sauce and gently stir to coat the broccoli in the sauce.

Step 8

Add the drained pasta to the skillet and toss everything together until the pasta is evenly coated. Use the reserved pasta water, a few tablespoons at a time, to thin the sauce if needed.

Step 9

Taste and adjust seasoning with additional salt and pepper, if desired.

Step 10

Garnish with freshly chopped parsley before serving, if using. Serve warm and enjoy!
