Ingredients

  • 6 pieces sausages (British bangers or your choice)
  • 6 pieces bacon rashers
  • 4 pieces large eggs
  • 400 grams canned baked beans
  • 250 grams cherry tomatoes, halved
  • 150 grams mushrooms, sliced
  • 4 pieces frozen hash browns
  • 2 tablespoons olive oil
  • 100 grams cheddar cheese, grated
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 200°C (400°F). Lightly grease a large ovenproof dish with olive oil or cooking spray.

Step 2

Heat 1 tablespoon of olive oil in a large frying pan over medium heat. Add the sausages and cook for 5-7 minutes, turning occasionally, until browned but not fully cooked. Remove and set aside.

Step 3

In the same pan, add bacon rashers and cook for 3-4 minutes until lightly crispy. Remove and set aside with the sausages.

Step 4

Add the sliced mushrooms to the pan and cook for 3-4 minutes until softened. Set aside.

Layer the hash browns across the bottom of the greased oven dish in an even layer. Arrange the cooked sausages, bacon, mushrooms, and halved cherry tomatoes on top of the hash browns.
