Ingredients

  • 6 slices stale white bread (preferably brioche or white sandwich bread)
  • 50 grams unsalted butter (softened for spreading)
  • 75 grams raisins or sultanas
  • 50 grams granulated sugar
  • 300 milliliters whole milk
  • 200 milliliters heavy cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cinnamon

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a medium-sized baking dish with butter.

Step 2

Spread a thin layer of softened butter on one side of each slice of bread.

Step 3

Cut the buttered slices into triangles or smaller pieces and layer them in the baking dish, overlapping slightly. Sprinkle the raisins or sultanas between the layers.

Step 4

In a medium bowl, whisk together the eggs, sugar, vanilla extract, ground nutmeg, and ground cinnamon until combined.

Step 5

In a small saucepan over medium heat, warm the milk and cream together until just below boiling. Remove from heat.

Step 6

Slowly pour the warm milk and cream mixture into the egg mixture, whisking constantly to create a smooth custard.

Step 7

Pour the custard evenly over the bread slices in the dish, ensuring all pieces are soaked. Lightly press down on the bread with the back of a spoon to submerge it.

Step 8

Let the pudding sit for 10 minutes to allow the bread to absorb the custard.

Step 9

Place the dish in the preheated oven and bake for 30–35 minutes, or until the top is golden brown and the custard is set.

Step 10

Remove from the oven and allow to cool slightly before serving. Serve warm, optionally with cream, custard, or a dusting of powdered sugar.
